Ingredients for Sweet Corn Cutlets
Sweet corn kernels: 1 cup (boiled)
Potatoes: 2 medium-sized (boiled and mashed)
Finely chopped onion: 1 small
Ginger-garlic paste: 1/2 teaspoon
Green chili: 1 (finely chopped, to taste)
Coriander leaves: 2 teaspoons (finely chopped)
Salt: To taste
Chaat masala: 1/2 teaspoon
Corn flour or rice flour: 2 tablespoons (for binding)
Bread crumbs: For coating
Oil: For frying or shallow frying
Method for making Sweet Corn Cutlets
First, take mashed potatoes in a large bowl. Add boiled sweet corn kernels, finely chopped onion, ginger-garlic paste, green chili, coriander leaves, and all the spices (salt, chaat masala).
Now, add corn flour or rice flour to the mixture. Mix well to form a thick and smooth mixture. This binding will prevent the cutlets from breaking in the oil.
Now take small balls of this mixture and shape them into the desired shape (round or oval). You can make them a little thinner to make them crispier.
Coat the finished cutlets thoroughly in breadcrumbs. This will ensure a crispy exterior and reduce oil absorption. You can also refrigerate them for 10 minutes, which will make them even better when frying.
Heat oil in a pan. Fry the cutlets over medium heat until golden brown and crispy. For a healthier option, you can shallow fry them in less oil.
