Naga Chicken Curry
To make a Naga chicken curry you will need chicken, bamboo shoot and chopped cabbage. You will also need to use crushed tomatoes, ginger, garlic and green chilies. And the secret of this yummy food is it’s cooked without oil!
Wash the chicken and cut it into pieces. And crush the garlic, green or red chili. Mix the chicken thoroughly and marinate it for half an hour. Pour some water and cook until it becomes soft and garnish with some coriander leaves.
Naga Tomato Chutney
The chutney of Nagas is not the same sugary taste or chopped vegetables crushed chutney. Hot peppers are crushed in most of the chutney. The ingredients are chili king, tomatoes, ginger and garlic pods, a handful of mint and coriander leaves. To make it a little softer, add two teaspoons of water and two three pinches of salt and cook the tomato till it gets soft. It should be served with hot rice chicken curry, daal.
Pork with Bamboo Shoots
For this you need pork, bamboo shoots, coriander leaves, cumin powder, garlic, ginger, chili, mustard oil, onions, potatoes, raja mircha (king chilly) chilli powder and salt to taste.
Grind the garlic and ginger to a paste. Peel and chop the onions. Cut the potatoes into 4 pieces. Slit the green chilies into half. Clean and wash the pork. Put some Mustard Oil, salt, chili powder, ginger and garlic paste, and cumin powder in a bowl and mix well. Put the pork in the marinate mixture and leave aside. Heat the mustard oil in medium flame on a pressure cooker. Once the oil is heated, gently put in the chopped onions and stir fry till it browns up a bit. And then add the ginger and garlic paste. Stir fry until the mixture turns light brown. Add raja mirchas, green chilies, and bamboo shoots and stir fry for about 2/3 minutes.
Now add the marinated pork and stir. Cover, but don’t close the lid, and cook for 4 minutes. Turn the meat with a spoon, add the cut potato pieces and stir again. Add about a glass of water and close the lid of the pressure cooker. Let it whistle for about 6-7 times before you turn off the flame. Garnish with coriander leaf and serve with hot rice.
