New Delhi: Moringa—also known as 'Sahjan' or drumstick leaves—is considered highly beneficial for health, especially during the summer season. You have likely enjoyed parathas and 'cheelas' (savory pancakes) made from its leaves plenty of times by now.

But have you ever tried a 'dal' (lentil dish) prepared using these leaves? Made with mild spices and a flavorful tempering ('tadka'), this dal tastes delicious when paired with 'roti' (flatbread) or rice, and it offers significant health benefits as well.

Ingredients

  • ½ cup Yellow Moong Dal (Split Yellow Lentils)
  • 1 cup Fresh Moringa Leaves
  • 2 tbsp Finely Chopped Onion
  • 2 tbsp Chopped Tomato
  • ¼ tsp Turmeric Powder
  • ½ tsp Cumin Seeds ('Jeera')
  • 2 Garlic Cloves
  • 1 tsp Oil or Ghee
  • Salt (to taste)
  • 2 cups Water

How ​​to Make Moringa Dal?

First, thoroughly wash the Moong Dal and cook it in a pressure cooker with the turmeric powder and water until it whistles 2–3 times.

Now, heat the oil or ghee in a pan and add the cumin seeds. Once the cumin seeds begin to splutter, add the garlic and onion, and sauté until they turn a light golden color.

Next, add the tomatoes and cook until they soften. Then, add the Moringa leaves and sauté them lightly for about 1 minute to help retain their vibrant color and nutritional value.
